I got several recipes from a Korean friend at the university. This is one of the few sweets recipes – a no bake gluten free candylike cookie which looks quite pretty.

Visual Recipe – Peanut Butter Cookies
Here is what you need to make peanut butter cookies:
1 1/4 cups flour (sifted)
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup shortening (I use butter)
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon vanilla
1 egg

Visual Recipe – Thumbprint Cookies – Rosenmunnar
They say these Thumbprint Cookies (also known as Rosenmunnar) are Christmas Cookies, but I’m guessing “THEY” don’t know how easy these are to make all year round.
1/2 cup butter (softened)
1/4 cup white sugar
1 cup sifted flour
1/4 cup jelly or preserves
(I got 33 one inch cookies out of this)
Combine sugar and butter.

I’m a stay at home mom. That always cracks me up: “stay at home mom.” As if I don’t have loads of laundry to do, three kids to entertain, not to mention educate, meals to prepare, and I can just kick my feet up all day and eat bon bons.
Well, after making this Oreo Truffle / Oreo Balls / Bon-Bon recipe, I might just have to take some time to kick back and relax!
Here’s how to make your own Oreo truffles:
1 lb. Oreo sandwich cookies
8 oz. cream cheese
Chocolate (I used about 3 squares of the Baker’s Chocolate)
Sprinkles (optional)

Visual Recipe – Hawaiian Mood Cookies and Cupcakes
1/4 cup shredded coconut
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. of salt
1/4 cup butter (softened by standing at room temperature or microwaving it slightly)
1 1/2 oz. regular cream cheese (softened by standing at room temperature)
1 tsp. vanilla
1/2 cup granulated sugar
1 egg
1/2 cup crushed pineapple, packed (measure this amount only after pineapple has been squeezed rigorously through a sieve to remove as much moisture as possible)
1/4 cup finely chopped maraschino cherries, packed (measure this amount only after the chopped maraschino cherries have been squeezed rigorously through a sieve to remove as much moisture as possible)
about 12 additional whole maraschino cherries, cut in half (optional)
The baked cookies are soft and cake-like (not hard and crispy) and taste somewhat like macaroons but with the additional flavor and texture of pineapple and maraschino cherries.

Visual Recipe – No Bake Oatmeal Cookies
I will admit it. I don’t like baking oatmeal cookies.
Why? Because whenever I bake oatmeal cookies, they turn out very flat, and very crunchy. I’m more of a soft and chewy sort of cookie gal.
But when I found this easy no bake oatmeal cookie recipe, I was super excited.
What You Need:
2 c. rolled oats
3/4 c. white sugar
3 tbs. unsweetened cocoa powder
1 tbs. water
1/2 tsp. vanilla
2/3 c. butter, softened
1 c. powdered sugar (aka confectioner’s sugar)

Thumbprint Cookies Are a Norwegian Tradition
One of my good friends was recently explaining how much she missed her Norwegian grandmother’s Christmas cookies. She recalled them as a simple butter cookie marked by her grandmother’s thumbprint and sprinkled in sugar. I took note of all of the details and luckily, I was able to find a recipe that matched her description.
I gathered up all of the ingredients and got to work. These treats turned out to be simple and dense butter cookies, perfect for a quick dip in a cup of coffee. While the thumbprint was not her grandmother’s, she was thrilled to receive a plate full of such a familiar cookie.
