Caramel Corn Clusters
This recipe is adapted from Lundberg Rice and uses brown rice syrup instead of HFCS or regular processed white sugar. You will need a candy thermometer for this one. Feel free to add in a mixture of nuts where it calls for peanuts or even pretzel pieces for some of the popcorn. What a tasty treat!! — posted by Mindelicious

Caramel Corn Pops
My DH and DS are always begging me to make this. It is VERY addictive, super easy to make, and most certainly not very good for you. — posted by McKinley’s Momma

State Fair Blue Ribbon Caramel Corn
I used to make a different recipe but here in the Pacific Northwest we get too many rainy days and too many sticky failures so I thought I would adapt the recipe and bake at a higher temperature. It’s really crispy. I bake at 275* for an hour on a clear day but the original recipe calls for baking at 250* for 45 minutes to one hour. This is the kind of popcorn you want to smuggle into the movie theater and not share with anyone. — posted by Secret Agent

Creamy Lower Fat Caramel Corn
The secret ingredient in this recipe will have you feeling like there’s a ton of butter and cream in there… though there’s not. Go ahead and indulge in this ooey-gooey treat! This recipe uses the microwave. If you do not have fleur de sel, simply use coarse grain salt or simply omit. — posted by Géniale Génie

Candy Corn Snack Cakes
It’s hard to top the classic appeal of real candy corn, but in my opinion these Candy Corn Snack Cakes, decorated to look like giant candy corn kernels, come pretty close. You can use your choice of brownies, rice crispy treats, or cake in this recipe. Imagine how great a whole platter of these would look at a Halloween party!
